- 2 cups corn kernels (can be fresh, frozen or canned)
- 1 large tomato, diced
- 1/2 cup think sliced scallions
- 1 (15oz) can black beans, rinsed and drained
- 1/4 cup red wine vinegar
- 1 teaspoon sugar
- 2 teaspoons canola oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Combine corn, bell pepper, onions, and beans in a medium bowl
- In a separate bowl combine the remaining ingredients
- Toss with the corn and bean mixture
